For the angel food cake:
- 1 1/4 cups watermelon purée
- 1 lime zested and juiced
- 1 box angel food cake mix
For the honey-lime yogurt sauce:
- 1 cup plain Greek yogurt
- 1/4 cup honey
- 1 tablespoon lime juice
- 1 teaspoon lime zest plus more, to taste, for garnish
Directions
- Preheat the oven to 350 degrees F.
- In a mixing bowl, add the watermelon purée, the zest from 1 of the limes, the juice from 1 of the limes, and the cake mix and combine with an electric mixer on low speed.
- Increase the mixing speed to high and mix until the batter is light and fluffy, about 1 minute.
- Pour the batter into an ungreased fluted cake pan.
- Bake the cake until the top is brown with dry cracks, about 35-45 minutes.
- Transfer from the oven and immediately invert the fluted cake pan onto a long-necked bottle or other item that will support the pan to prevent the cake from collapsing.
- In a bowl, stir the Greek yogurt, the honey, the remaining lime juice, and the remaining 1 teaspoon lime zest.
- Serve the cake with the honey-lime yogurt sauce and garnish the cake with the extra lime zest.
