  • 1 1/2 tablespoons cornstarch
  • 3 teaspoons fresh lemon juice

For the pie:

  • 1 (8-ounce) package cream cheese room temperature
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 (9-inch) graham cracker crust

Directions

  • In a small saucepan, add 2 cups of the strawberries, the sugar, the cornstarch, and the lemon juice.
  • Place the saucepan over medium-low heat and cook, stirring, until the strawberries start to release their juices, about 5 minutes.
  • Mash the strawberries with a spoon or a masher.
  • Increase the heat to medium-high and bring the mixture to a boil.
  • Allow the mixture to boil for 1 minute, stirring consistently to ensure it does not burn.
  • Transfer the saucepan from the heat and allow the strawberries to cool.
  • In a mixing bowl, add the cream cheese and beat until it is smooth.
