  • 3/4 medium zucchini finely grated
  • 1/2 carrot finely grated
  • 1 cup spinach finely diced
  • 1/3 cup applesauce
  • 1 tablespoon ground flax seeds mixed with 2 tablespoons water
  • 1/2 cup maple syrup
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 cup dark chocolate chips

Directions

  • Preheat the oven to 375 degrees F.
  • Line a baking sheet with parchment paper.
  • In a mixing bowl, combine the zucchini, the carrot, the spinach, the apple sauce, the flax seed mixture, and the maple syrup.
  • In another bowl, add the flour, the oats, the cocoa powder, the baking soda, the salt, and the cinnamon and stir to combine.
