  • 4 (6-ounce) chicken breasts boneless and skinless
  • 1/2 teaspoon plus 1/8 teaspoon salt divided

  • 1 medium lemon thinly sliced
  • 2 tablespoons lemon juice
  • 1 tablespoon pure maple syrup
  • 2 tablespoons unsalted butter cut into pieces
  • 1 teaspoon cracked pepper

Directions

  • Preheat the oven to 425 degrees F.
  • Sprinkle the chicken breasts evenly with 1/2 teaspoon of the salt.
  • Heat the oil in a large ovenproof skillet over medium-high heat.
  • Add the chicken to the oil and cook, undisturbed, until the underside is golden-brown, about 4 minutes.
  • Flip the chicken and cook until the other side is golden-brown, about 4 minutes.
  • Arrange the lemon slices around the chicken in the pan, then transfer the skillet to the oven.
  • Bake the chicken until an instant-read thermometer inserted into the thickest portion of it registers 165 degrees F, about 10 minutes.
  • Transfer the chicken to a platter.
  • In the same skillet, add the lemon juice and the maple syrup.
  • Add the butter to the syrup mixture, 1 piece at a time, and cook, while stirring, until the butter melts into the sauce.
  • Stir the pepper and the remaining salt into the sauce.
  • Drizzle the sauce over the chicken.
  • Serve.
