  • 3 1/4 pounds baking potatoes peeled, chopped, and boiled
  • 1 large sweet potato peeled, chopped, and boiled
  • 1 (8-ounce) tub chive and onion cream cheese spread
  • 1/2 cup sour cream
  • 1/4 teaspoon black pepper
  • 1/4 cup parmesan cheese shredded and divided
  • 1/4 cup cheddar cheese shredded and divided

Directions

  • Preheat the oven to 375 degrees F.
  • Grease a 2-quart casserole dish.
  • Place the baking potatoes and the sweet potatoes into separate bowls.
  • Into each bowl, add 1/2 of the cream cheese spread, 1/2 of the sour cream, and 1/2 of the pepper and mash until creamy.
  • Stir 1/2 of the parmesan into the baking potatoes mash.
  • Stir 1/2 of the cheddar into the sweet potato mash.
  • Layer 1/2 of the sweet potatoes and then 1/2 of the potatoes into the prepared baking dish (you may choose to reverse the layers).
  • Repeat the layers.
  • Bake for 15 minutes.
  • Top the potatoes with the remaining parmesan and the remaining cheddar.
  • Bake until the cheese is melted, about 5 minutes.
  • Serve.
