Ingredients

  • 4 tablespoons butter softened, plus more, to taste
  • 2 tablespoons parsley chopped, plus more, optional, to taste
  • 2 tablespoons scallions chopped, plus more, optional, to taste
  • 2 tablespoons chives chopped, plus more, optional, to taste
  • 8 slices white bread
  • 4 slices Irish cheddar cheese
  • 12 slices bread-and-butter pickles

Directions

  • In a bowl, add 4 tablespoons of the butter, 2 tablespoons of the parsley, 2 tablespoons of the scallions, and 2 tablespoons of the chives and mash to combine.
  • Spread 1/2 of the herb-butter mixture on 4 slices of the bread.
  • Add 1 slice of the Irish cheddar cheese and 3 slices of the pickles to the buttered-side of each of the bread slices.
  • Cover the cheese and the pickles with the remaining bread slices, closing the sandwiches.
  • Spread the extra plain butter on the outsides of the sandwiches.
  • Preheat a large skillet over medium heat.
  • Place the sandwiches in the skillet and fry until golden, about 3-4 minutes per side.
  • Spread the remaining herb-butter mixture on the hot sandwiches.
  • Slice the sandwiches into quarters.
  • Press the cut-sides of the sandwiches in the extra parsley, the extra scallions, and the extra chives.
  • Serve.
