Ingredients

For the pizza:

  • 1 cup all-purpose flour
  • 1/4 cup confectioners' sugar
  • 1/2 cup cold butter cubed

  • 5 teaspoons cornstarch
  • 1 1/4 cups unsweetened pineapple juice
  • 1 teaspoon lemon juice

For the fruit topping:

  • 1 (8-ounce) package reduced-fat cream cheese
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries halved
  • 1 cup fresh blueberries
  • 1 (11-ounce) can mandarin oranges drained

Directions

  • Preheat the oven to 350 degrees F.
  • In a large bowl, mix the flour and the confectioners' sugar together, and then cut in the butter until a crumbly texture forms.
  • Press the crumble into an ungreased 12-inch pizza pan.
  • Bake the crust until it is very lightly browned, about 10-12 minutes.
