Ingredients

  • 3 1/2 cups 2% milk
  • 1/2 cup long-grain rice uncooked
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup raisins
  • 1 teaspoon vanilla extract
  • ground cinnamon to taste

Directions

  • Preheat the oven to 325 degrees F.
  • Grease a 1 1/2-quart baking dish and line a baking sheet with foil. Place the baking dish on the baking sheet.
  • Add the milk, the rice, the sugar, and the salt to the saucepan over medium heat and bring the mixture to a boil, stirring constantly.
  • Transfer the rice mixture to the prepared baking dish.
  • Cover the dish with foil and bake the rice mixture, stirring every 15 minutes, for 45 minutes.
  • Carefully add the raisins and the vanilla to the rice mixture and stir to combine.
  • Bake the rice mixture, covered, until the rice is tender, about 15 minutes.
  • Sprinkle the top of the pudding with the cinnamon.
  • Serve warm, or refrigerate and serve cold.
