Ingredients

  • 1 1/2 pounds 90% lean ground beef
  • 1 teaspoon salt
  • 2 medium onions chopped
  • 4 cups cabbage chopped
  • 1 (16-ounce) package frozen mixed vegetables such as carrots, green beans, corn, and peas
  • 1 (28-ounce) can crushed tomatoes
  • 1 bay leaf
  • 3 teaspoons Italian seasoning
  • 1/2 teaspoon pepper
  • 2 (32-ounce) cartons reduced-sodium beef broth

Directions

  • In a 6-quart stockpot over medium-high heat, add the ground beef, the salt, and the onions and cook, while crumbling the meat, until the beef is no longer pink, about 6-8 minutes. Drain the excess grease.
  • Add the cabbage, the mixed vegetables, the tomatoes and their juices, the bay leaf, the Italian seasoning, the pepper, and the broth to the beef mixture and bring to a boil.
  • Reduce the heat and simmer the soup until the cabbage is crisp-tender, about 10-15 minutes.
  • Remove and discard the bay leaf.
  • Serve.
