Recipe Background

Master homemade caramel by allowing sugar to caramelize without stirring.
Transforming sugar into caramel might seem like magic, but it's more of a dance with heat. The granulated sugar and water combine, bubbling away in the pot until they morph into a deep amber liquid. This process releases a rich, toasted aroma that fills your kitchen, hinting at the sweetness to come. The key to this transformation is patience—resist the urge to stir, allowing the sugar to find its own way to caramelization.
As the mixture reaches the perfect shade of deep honey, butter joins the party. Quickly melting into the caramel, it adds a lush, buttery depth. The heavy cream follows, only to be whisked in carefully, creating a velvety blend that adds a soft, silky texture. A whisper of vanilla and a pinch of salt lift the flavors, crafting a caramel that's both complex and comforting. Don't rush the cooling process in the pan; it needs this time to thicken to just the right consistency.
Sharing homemade caramel can be as enchanting as making it. Whether drizzled over ice cream or spread over toast, its luscious texture and sweetly aromatic taste bring a touch of indulgence to everyday treats. Every spoonful reflects the warmth of home-cooked simplicity, inviting smiles and perhaps a compliment or two.

Ingredients

  • 1 cup granulated sugar
  • 1/4 cup water
  • 6 tablespoons unsalted butter cut into pieces
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla
  • salt to taste

Directions

  • Add the sugar and the water to a 3-quart heavy-bottomed saucepan and stir so it sits in a flat, even layer.
  • Warm the pot over medium heat and cook until the sugar dissolves, turns clear, and starts to bubble, about 3-4 minutes.
  • Allow the caramel mixture to bubble, swirling the saucepan occasionally and brushing down the sides of the pan as needed to prevent crystallization, until it thickens and turns a deep honey-like color, about 8-12 minutes. Do not stir and be sure it does not burn. It is okay for sugar clumps to form.
  • Carefully add the butter to the caramel mixture and whisk until it has completely melted. Use caution as it will rapidly bubble.
  • Transfer the saucepan from the heat, then slowly pour the heavy cream into the caramel mixture, whisking continuously, until all of the cream has been incorporated.
  • Whisk the vanilla and the salt into the caramel mixture.
  • Let the caramel cool in the pan for 10 minutes.
  • Pour the caramel into a lidded glass jar to cool completely. It will thicken as it cools.
  • Serve.
