Recipe Background

A cozy breakfast bake with flaky biscuits and savory sausage gravy.
This Down-Home Breakfast Bake brings the simple pleasures of a hearty morning meal to your table. As the biscuits bake to a gentle golden hue, their buttery aroma fills the kitchen. The comforting smell of sage and savory sausage wafts through, a promising hint of the flavors to come. When you taste the bake, expect a harmonious balance of crisp biscuit tops with tender insides, nestled among a creamy, peppery gravy.
Preparing the sausage gravy is an exercise in patience and instinct. Browning the sausage until it’s richly fragrant is key—this step develops a depth of flavor that elevates the whole dish. As the flour mingles with the fat, you’ll notice the transformation into a thick, velvety base, absorbing every spice.
Serving this dish is a joy, evoking warm conversations and second helpings. With its layers of texture and taste, the bake feels both familiar and a bit indulgent. Sharing it with friends or family makes for a satisfying, memorable breakfast. Enjoy the communal joy of digging into this pan of goodness, every bite as comforting as the last.

  • 1/2 pound ground breakfast sausage
  • 3 tablespoons flour
  • 2 1/2 cups milk plus more, to taste
  • 1/2 teaspoon salt plus more, to taste

Directions

  • Preheat the oven to 400 degrees F.
  • Prepare a small casserole dish with cooking spray and set it aside.
  • Cut each biscuit into quarters.

  • Bake the biscuits until they just start to turn golden, about 10 minutes.
  • Heat a heavy skillet over medium-high heat and add the breakfast sausage.
  • Brown the sausage until fully-cooked, about 5-7 minutes.
  • Sprinkle the cooked sausage with the flour.
  • Stir the flour into the sausage until completely absorbed, about 1-2 minutes.
  • Lower the heat to medium and stir the sausage-flour mixture frequently, about 3-5 minutes.
  • Add 2 1/2 cups of the milk and stir to combine.
  • Season with 1/2 teaspoon of the salt and 1/2 teaspoon of the pepper.
  • Continue to stir until the mixture comes to a slight boil.
  • Taste and adjust with more of the salt and more of the pepper as needed.
  • Add more of the milk if the gravy is too thick.
  • Pour the gravy over the cooked biscuits in the casserole dish.
  • Layer the remaining uncooked biscuit pieces over the gravy.
  • Place the casserole dish on a baking sheet and bake until the top is golden-brown and cooked through, about 20-25 minutes.
