  • 1 pound ground beef
  • 1 teaspoon garlic minced
  • 8 medium Yukon potatoes thinly sliced
  • 1/2 large onion thinly sliced
  • garlic salt to taste
  • coarse ground black pepper to taste
  • 1 1/2 cups Cheddar Jack cheese blend grated
  • fresh chives to taste, chopped, for garnish

Directions

  • Add the ground beef and the minced garlic to a large skillet over medium-low heat and cook until the meat is no longer pink.
  • Add the sliced potatoes and the onions to the beef mixture.
  • Season the potato-beef mixture with the garlic salt and the black pepper and stir to combine.
  • Cover the skillet with a lid and cook, about 15 minutes.
  • Remove the lid and stir the mixture well.
  • Return the lid and cook until the potatoes are tender, about 15 minutes.
  • Turn off the heat and top the potato bake with the cheese.
  • Return the lid and let it sit until the cheese is melted, about 5 minutes.
  • Garnish the potato bake with the chives.
