Ingredients
For the vegetables:
- 8 frozen mini corn on the cobs
- 8 tablespoons salted butter cut into 8 slices
- kosher salt to taste
- pepper to taste
- 1 1/2 pounds Yukon gold potatoes cut into bite-size pieces
- 1 1/2 tablespoons barbeque seasoning
- 1 tablespoon olive oil
For the chicken:
- 4 medium chicken breasts boneless and skinless
- 2 tablespoons barbeque seasoning
- 1 tablespoon olive oil
- 1/2 cup sweet barbeque sauce divided
Directions
- Preheat the oven to 400 degrees F.
- Spray a large sheet tray with cooking spray.
- Tear off eight small pieces of foil.
- Place 1 of the corn cobs on each piece of foil.
- Top each corn cob with 1 tablespoon of the butter, the kosher salt, and the pepper.
- Wrap the foil around each piece of the corn to form a packet.
- Place the foil-wrapped corn cobs on one end of the prepared sheet tray.
- Place the potatoes on the center of the prepared sheet tray.
- Toss the potatoes with 1 1/2 tablespoons of the barbeque seasoning and 1 tablespoon of the olive oil.
- In a large bowl, toss the chicken breasts with the remaining barbeque seasoning and the remaining olive oil until coated.
- Place the chicken on the open space of the prepared sheet tray.
- Brush the chicken with 1/4 cup of the sweet barbeque sauce.
- Bake the sheet tray for 20 minutes.
- Toss the potatoes and brush the chicken with the remaining sweet barbeque sauce.
- Bake until the potatoes are tender and the chicken reaches 165 degrees F internally, about 20 minutes.
- Optionally, switch the oven to the high broil setting and broil the chicken until caramelized, about 2-3 minutes.
- Serve immediately.
