Ingredients

  • 1 (8-ounce) package egg noodles
  • 1 pound lean ground beef
  • 1 onion chopped
  • 2 (7-ounce) cans tomato sauce with mushrooms divided

  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cinnamon
  • 1 cup cottage cheese
  • 1/2 cup green onions chopped
  • 1/2 cup cheddar cheese shredded

Directions

  • Preheat the oven to 350 degrees F.
  • Bring a large pot of lightly salted water to a boil.
  • Add the pasta to the boiling water and cook until al dente according to the package directions; drain.
  • In a skillet over medium heat, cook the ground beef, while crumbling, with the onion until no pink shows, about 5-7 minutes. Drain the excess grease.
  • Mix 1 can of the tomato sauce, the salt, the pepper and the cinnamon into the meat mixture.
  • Pour the meat mixture into a shallow 3-quart casserole baking dish.
  • Pour the cooked pasta over the meat mixture.
  • Top the pasta with the cottage cheese, sprinkle with the green onions and the cheese, and pour the remaining can of the tomato sauce on top.
  • Bake, uncovered, until heated through and the cheese is bubbly, about 30 minutes.
