For the salad:

  • 12 cups coleslaw mix
  • 4 cups rotisserie chicken finely chopped
  • 1 1/2 cups almonds or cashews toasted and sliced
  • 1 1/2 cups dried cranberries
  • 3/4 cup red onion finely diced
  • 1/4 cup black sesame seeds
  • 1 1/2 cups cilantro chopped
  • 1 cup sesame sticks optional
  • 2 (8.25-ounce) cans mandarin oranges drained

For the dressing:

  • 1 cup extra-virgin olive oil
  • 1/2 cup balsamic vinegar
  • 4 tablespoons low-sodium soy sauce
  • 4 cloves garlic chopped
  • 4 tablespoons honey or brown sugar
  • 4 tablespoons ginger minced
  • 2 teaspoons toasted sesame oil
  • 3 tablespoons water

Directions

  • In a large bowl, layer the coleslaw mix, the chicken, the almonds, the cranberries, the red onion, the sesame seeds, the fresh cilantro, and the sesame sticks.
  • Add the mandarin oranges.
