Ingredients
- 1 (10-ounce) package frozen chopped spinach thawed and squeezed dry
- 1 cup sharp cheddar cheese divided
- 1/3 cup dry breadcrumbs divided
- 1 egg beaten
- 1 pound cod fillets
- salt to taste
- pepper to taste
Directions
- Preheat the oven to 325 degrees F.
- In a medium bowl, combine the spinach, 1/2 cup of the cheddar cheese, 5 tablespoons of the breadcrumbs, and the egg.
- Spread the spinach mixture into the bottom of a small baking dish.
