Ingredients
- 5 strips bacon
- 1 small onion diced
- 1 cup fresh spinach packed
- 1 tablespoon garlic minced
- 12 eggs
- 1/2 cup milk
- salt to taste
- black pepper to taste
- 1/2 cup feta cheese
Directions
- Preheat the oven to 375 degrees F.
- Grease an 8-inch square baking dish.
- In a large skillet over medium-high heat, add the bacon and cook, flipping occasionally, until they are crispy.
- Place the cooked bacon on a paper-towel-lined plate to drain and keep the bacon drippings in the skillet.
- In the same skillet, add the onions, the spinach, and the garlic to the bacon drippings and sauté until the onions and the spinach are tender, about 5 minutes.
- Pour the spinach mixture in the prepared baking dish.
- In a large bowl, whisk the eggs.
- Add the milk, the salt, and the black pepper to the beaten eggs and whisk to combine.
- Cut the bacon into small pieces, then sprinkle 2/3 of them over the spinach mixture.
- Sprinkle 2/3 of the feta cheese over the bacon layer and top with the egg mixture. Stir to combine.
- Sprinkle the remaining bacon and the remaining feta cheese over the egg mixture.
- Bake the egg bake until the center is set and a toothpick inserted into the center comes out clean, about 40-45 minutes.
