- 1 1/2 pounds lean ground beef
- 1 medium onion chopped
- 1 (28-ounce) can diced tomatoes undrained
- 2 (14.5-ounce) cans beef broth
- 1 cup water
- 4 celery ribs thinly sliced
- 4 large carrots halved and thinly sliced
- 1/2 cup quick-cooking barley
- 1 teaspoon dried thyme
- 1/4 teaspoon pepper
- 1/4 cup fresh parsley minced
Directions
- In a large saucepan over medium heat, add the beef and the onion and cook until the meat is no longer pink, breaking it up as you cook, about 5-7 minutes.
- Drain the fat from the saucepan.
- Stir the tomatoes, the broth, and the water into the meat mixture.
- Bring the mixture to a boil.
