- 3 tablespoons butter
- 2 small shallots minced
- 2 pounds Brussels sprouts halved

- 1/2 teaspoon cayenne pepper
- 3/4 cup heavy cream
- 1/2 cup sharp white cheddar shredded
- 1/2 cup Gruyere shredded
