  • 2 tablespoons honey plus more, to taste
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds
  • 3/4 cup old-fashioned oats plus more, to taste
  • chocolate chips or pretzel crumbles optional, to taste

Directions

  • Line a baking tray with parchment paper.
  • Place 3/4 cup of the peanut butter, 2 tablespoons of the honey, and the vanilla in a microwave-safe bowl.
  • Microwave the mixture for 20 seconds.
  • Stir the peanut butter mixture until well-combined.
  • Taste the peanut butter mixture, adding the extra honey, to taste, for more sweetness.
  • Add the chia seeds, 3/4 cup of the oats, and the optional mix-ins into the peanut butter mixture and stir well until well-incorporated.
  • Taste the mixture for flavoring, adding more of the oats if the mixture is too runny and more of the honey or the peanut butter if it is too dry.
  • Roll the mixture into eight balls.
  • Place the balls on the prepared baking sheet and slightly press them flat.
  • Place the cookies in the fridge or the freezer to chill until set, at least 1 hour and up to overnight.
  • Allow the cookies to thaw for a few minutes before serving.
