- 1 pound ground beef
- 1 pound ground pork sausage
- 3/4 cup green bell pepper diced
- 3/4 cup yellow onion diced
- 1/4 cup celery diced
- 1 tablespoon dried oregano
- 2 teaspoons dried thyme
- 2 teaspoons garlic minced
- 1 1/2 teaspoons salt
- 1 teaspoon chili powder
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 cup flour
- 2 cups chicken broth
- 3 bay leaves
- 4-5 cups rice cooked with chicken broth
- 2 tablespoons fresh parsley chopped
Directions
- In a large skillet, heat the bacon grease.
- Add the ground beef and the sausage to the grease, and brown the meat, crumbling as it cooks, about 5-7 minutes.
- As the meat begins to brown, add the diced bell pepper, the onion, and the celery to the skillet.
- When the meat is fully browned, stir the oregano, the thyme, the garlic, the salt, the chili powder, the black pepper, and the cayenne pepper into the meat mixture, mixing well.
- Add the flour to the meat mixture and mix well, making sure the flour coats the meat.
