Recipe Background

Lemon custard balances creamy, tart flavors with a silky texture.
Lemon custard is a dessert that strikes a balance between creamy and tart, a symphony of soft, bright citrus and silky texture. As you cook, the aroma of lemons and vanilla fills your kitchen, promising something special. Whisking steadily over gentle heat is key—coax it patiently until it thickens luxuriously. This mindful stirring ensures a smooth, velvety custard without the risk of curdling.
Once chilled, this custard reveals its true self. Each spoonful offers a lush creaminess, softened by buttery undertones and vanilla’s sweet whispers. It’s the kind of dessert that brings smiles without demanding attention, perfect for savoring slowly or sharing with friends over coffee. The simplicity of ingredients lets each flavor shine, advancing the humble lemon to charismatic heights.
Sharing this dish invites small moments of joy. Whether at a family gathering or a quiet evening in, it connects those around the table with its unfussy yet refined nature. Everyone—young or older—can appreciate its gentle tang and smooth finish. After tasting, memories linger like a well-loved recipe passed from hand to hand, subtly evolving but always cherished.

Ingredients

  • 2-3 lemons divided
  • 2/3 cup granulated sugar
  • 3 1/2 tablespoons cornstarch
  • 4 egg yolks
  • 2 1/3 cups milk
  • 3/4 cup light cream
  • 2 tablespoons butter or margarine
  • 1 teaspoon vanilla extract

Directions

  • Under cold water, wash the lemons and then dry them gently with paper towels.
  • On a cutting board with a fine grater or zester, finely grate the lemons to create 1 tablespoon of zest.
  • With a sharp knife and juicer, cut the remaining portion of the lemons in half and squeeze the lemons in the juicer to make 1/4 cup of lemon juice.
  • In a medium saucepan, add the lemon zest, the granulated sugar, and the cornstarch and whisk to combine.
  • Add the egg yolks, the milk, and the light cream to the sugar mixture and whisk to combine.
  • Transfer the custard mixture to the stovetop over medium-low heat to cook, whisking continually, until thickened and starting to boil, about 15 minutes.
  • Once the custard mixture comes to a boil, whisk continually and let bubble, about 1 minute.
  • Transfer the custard mixture to a wire rack and add the lemon juice, the butter, and the vanilla extract, stirring to combine.
  • Transfer the custard mixture from the saucepan to a medium bowl, immediately adding plastic wrap directly on the top of the actual custard mixture to prevent the custard from forming a skin.
  • Transfer the covered custard mixture to the refrigerator to chill for at least 2 hours.
  • Serve.
