Ingredients
- 3 pounds Yukon Gold potatoes sliced 1/2-inch-thick
- water to taste
- kosher salt to taste
- 1 small red onion finely chopped
- 1 1/2 cups mayonnaise
- 1/4 cup dill pickles chopped
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon paprika
- 4 eggs hard-boiled and chopped
- 1/4 cup chives thinly sliced
- freshly ground black pepper to taste
Directions
- In a large pot, add the potatoes and enough of the water to just cover them.
- Generously season the potatoes with the salt, then bring it to a boil. Cook until they are fork-tender, about 12-15 minutes.
- Drain the water and let the potatoes cool slightly.
