- 3 tablespoons extra-virgin olive oil
- 1 small yellow onion diced
- 1 red bell pepper cut into thin strips

- 1 clove garlic finely chopped
- 1 (8-ounce) bag baby spinach leaves
- pepper to taste
- 2 green onions thinly sliced
- 1/4 cup parmesan cheese shredded
- 1/3 cup feta cheese crumbled
- 6-8 (8-inch) gluten-free low-carb, or whole wheat flour tortillas
- cooking spray to taste
Directions
- Preheat the oven to 350 degrees F.
- Coat a 9x13-inch baking dish with cooking spray.
- Place the cream cheese in a medium-sized mixing bowl.
- In a large skillet over medium heat, heat the olive oil.
- Add the onions and the peppers and season them with the salt.
- Cook the onions and the peppers until tender, about 3-4 minutes.
- Stir in the garlic and cook until fragrant, about 30 seconds.
- Add the spinach, the salt, and the pepper and cook, while stirring, until the spinach is cooked down, about 3 minutes.
