Ingredients

  • 2 eggs plus 4 egg whites yolks reserved for another use
  • 1 tablespoon chives
  • 2 teaspoons butter divided
  • 2 pretzel buns split horizontally
  • 2 slices Swiss cheese
  • salt to taste
  • pepper to taste
  • 2 slices turkey bacon
  • jarred chipotle sauce optional, to taste, for serving

Directions

  • In a bowl, add the eggs, the egg whites, and the chives and whisk to combine.
  • In a skillet over medium heat, melt 1 teaspoon of the butter.
  • Add the pretzel buns, cut-side down, to the melted butter and toast until crispy and golden, about 2-4 minutes.
  • Transfer the pretzel buns to a plate and immediately layer each of the bottom buns with 1 slice of the Swiss cheese.
  • Add the remaining butter to the skillet and let it melt until it is frothy.
  • Add the egg mixture and cook, while slowly stirring, until they are scrambled and cooked to your desired doneness.
  • Season the eggs with the salt and the pepper.
  • Add the eggs evenly to each of the pretzel buns over the cheese layers.
  • In the same skillet over medium-high heat, add the turkey bacon and cook until crispy on both sides, about 4-5 minutes per side.
  • Place 1 slice of the bacon on top of each of the egg layers on the buns.
  • Drizzle the eggs and the bacon with the chipotle sauce.
  • Replace the top buns and serve.
