Ingredients
- 2 cups chicken cooked and shredded
- 1 1/2 cups Colby Jack mozzarella, or cheddar cheese, shredded, divided
- 1 (10.5-ounce) can condensed cream of chicken soup undiluted
- 1/2 cup milk
- 1/2 cup sour cream
- 1 (10-ounce) can tomatoes with green chilies drained
- 1/2 (1-ounce) packet dry ranch seasoning mix
- 1 (9.25-ounce) bag Doritos® Cool Ranch® chips coarsely crushed, divided
Directions
- Preheat the oven to 350 degrees F.
- Coat a 2-quart baking dish with nonstick cooking spray.
- In a large bowl, stir the chicken, 1 cup of the cheese, the condensed soup, the milk, the sour cream, the tomatoes and green chilies, and the ranch seasoning together.
- Place 1/2 of the chips in the bottom of the prepared baking dish and top with the chicken mixture.
- Cover the dish with foil and bake until heated through, about 20-25 minutes.
- Sprinkle the casserole with the remaining cheese and the remaining chips.
- Bake the casserole, uncovered, until the cheese has melted, about 5 minutes.
