Ingredients

  • 2 1/2 cups water
  • 2 tablespoons olive oil or butter optional
  • 10 ounces yellow rice
  • 1 (15-ounce) can black beans
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 2 tablespoons cilantro chopped, plus more, to taste, for garnish
  • 1 lime juiced
  • 1/4 cup sour cream optional

Directions

  • In a large saucepan with a tight-fitting lid, bring the water to a boil.
  • Add the olive oil to the boiling water.
  • Add the yellow rice and stir for 1 minute while the water is boiling.
  • Cover tightly and reduce the heat to a simmer.
  • Cook the rice until tender, about 20-25 minutes.
