Recipe Background
Experience the smoky, caramelized depth of BBQ brisket with rich aromas.
There’s something truly satisfying about the slow, smoky journey of cooking a brisket. This takes you straight to a backyard BBQ, where the air is thick with the woody aroma of hickory. As it grills, you’ll notice the brisket browning beautifully, the sugars in the rub caramelizing to form a savory crust, with just a touch of heat from the cayenne pepper. It’s a simple rub—yet that's what allows the flavor of the meat to sing.
Turning the brisket over every five minutes ensures an even sear, developing a golden hue on all sides. The texture becomes more inviting with every gentle flip. Once moved to the indirect heat, the slow cook truly begins. The brisket relaxes, tenderizes, and absorbs the whispers of smoke. Remember to baste it with your favorite BBQ sauce in the last half hour. It locks in moisture and adds a delightful, tangy layer.
Sharing this meal is a comforting ritual. When you serve the brisket, rested and sliced, the anticipation is palpable. The bark—a crunchy, spiced outer layer—crumbles lightly under the knife. Each bite balances tenderness with robust flavor, making it perfect for gathering friends or family around. So, dig in and relish in the simplicity of well-cooked meat and shared smiles.
Ingredients
- 1 tablespoon sugar
- 2 teaspoons salt
- 1 teaspoon sweet paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 (3-pound) brisket
- 2 cups hickory wood chips
- water to taste
- barbeque sauce homemade or store-bought, to taste
Directions
- Whisk together the sugar, the salt, the paprika, the onion powder, the black pepper, and the cayenne pepper.
- Rub the outside of the brisket evenly with the rub.
- Allow the seasoned brisket to sit on a cutting board at room temperature for 30 minutes.
- Pour the wood chips in a grill-safe foil pan, adding enough of the water to just cover the chips.
- Cover the grill-pan with foil, cutting slits in the foil to allow smoke to escape.
- Light the grill and scrape the grates clean.
- Turn off the burners on one half of the grill and keep the burners on the other half set to low heat.
- Place the brisket directly on the lit side of the grill, fat-side up, and grill until browned on the bottom, about 5 minutes.
- Turn the brisket over and grill until browned on the other side, about 5 minutes.
- Place the brisket into a separate, clean grill-safe foil pan, fat-side up, and move it to the unlit side of the grill.
- Place the covered pan with the wood chips on the lit side of the grill and close the grill.
- Allow the brisket to cook at 300 degrees F until tender, about 3 hours.
- In the final 30 minutes of grilling time, turn the brisket over so the fat-side is down and baste the brisket with the barbeque sauce.
- Transfer the brisket from the grill and baste it again with the barbeque sauce.
- Allow the brisket to rest on a clean cutting board for 10 minutes before slicing.
- Serve.
