Recipe Background

A warmly aromatic banana bread with a moist texture and balanced sweetness.
This Bus-Ride Banana Bread is like an old, comforting friend. The aroma wafting from your oven carries the cozy warmth of ripe bananas mingling with vanilla. It's an olfactory hug that makes your kitchen feel a little more like home. As it bakes, the texture transforms into something tender yet hearty, thanks to the applesauce and sour cream. These ingredients work quietly, ensuring each bite is moist—a little trick for enduring softness.
Cut a slice, and you'll notice it’s flecked with tiny banana bits, their sweetness enhanced by the contrasting sugars. Granulated sugar and brown sugar combine to offer a balanced sweetness, nuanced by a subtle caramel note. The top, with its inviting golden crust, adds just the right hint of resistance before melting into each soft mouthful.
Sharing this bread is its own satisfaction. It's a delicious reason to gather in the kitchen, armed with a mug of tea or coffee. When slicing, remember to let it rest a few moments—patience rewards you with cleaner slices. Each piece is a simple yet wonderful reminder that great flavor often comes from letting good ingredients speak for themselves.

Ingredients

  • 3 ripe bananas
  • 1/2 cup applesauce
  • 1/2 cup sour cream
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Directions

  • Preheat the oven to 350 degrees F.
  • Coat a 9x5-inch loaf pan with nonstick cooking spray.
  • In a large bowl, mash the bananas.
  • Add the applesauce, the sour cream, the eggs, and the vanilla extract to the mashed bananas and stir until it is well-combined.
  • Add the granulated sugar and the brown sugar to the banana mixture and stir until it is combined.
  • Add the flour, the baking soda, and the salt to the banana mixture and use a spatula or wooden spoon to stir until it is just combined into a batter. Be careful not to overmix.
  • Evenly pour the batter into the prepared loaf pan, then gently tap it to release any air bubbles.
  • Bake the banana bread until a toothpick inserted into the center comes out clean, about 50 minutes-1 hour.
  • Transfer the loaf pan to a wire rack and let the banana bread cool, about 10-15 minutes.
  • Invert the banana bread onto the wire rack and let it cool completely.
  • Slice and serve.
