Ingredients

  • 1 1/2 pounds ground turkey
  • 1 medium onion finely chopped
  • 1 medium sweet red pepper finely chopped
  • 1 (28-ounce) can diced tomatoes undrained
  • 1 (14.5-ounce) can fire-roasted diced tomatoes undrained
  • 1 (14.5-ounce) can reduced-sodium beef broth
  • 1 (4-ounce) can sliced mushrooms drained
  • 1 tablespoon brown sugar packed
  • 1 tablespoon chili powder
  • 8 ounces angel hair pasta uncooked
  • 1 cup cheddar cheese shredded

Directions

  • In a large cast-iron skillet over medium heat, add the turkey, the onion, and the red pepper and cook, while crumbling the meat, until the turkey is no longer pink, about 5-7 minutes. Drain the excess grease.
  • Add the diced tomatoes, the fire-roasted tomatoes, the beef broth, the mushrooms, the brown sugar, and the chili powder to the meat mixture and bring it to a boil.
  • Reduce the heat and simmer the meat mixture, uncovered, for 30 minutes.
  • Add the pasta to the meat mixture and return it to a boil.
  • Reduce the heat, cover it, and simmer the pasta mixture until the pasta is tender, about 30-35 minutes.
  • Sprinkle the pasta mixture with the cheese, then cover and cook until it has melted, about 2-3 minutes.
