  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon onion powder
  • salt to taste
  • pepper to taste
  • 1/4 teaspoon garlic powder
  • 1 tablespoon lime juice
  • 1 tablespoon corn oil
  • 1 pound chicken breasts cut into 1-inch cubes
  • 1 large red bell pepper cut into small squares
  • 1 large green bell pepper cut into small squares
  • 4 thick center-cut bacon slices cut into 4 pieces each
  • 1/2 medium red onion cut into 1-inch pieces

Directions

  • Preheat the grill to medium-high heat.
  • In a medium bowl, combine the Mexican oregano, the cumin, the onion powder, the salt, the pepper, and the garlic powder.
  • Add the lime juice and the corn oil to the spice rub and stir to combine.
  • Add the chicken pieces to the spice rub mixture and stir to coat well.
