- 2 (15-ounce) cans black beans rinsed and drained
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons paprika
- 1/2 teaspoon cayenne pepper
- 1 2/3 cups water divided

- pepper to taste
- 2/3 cup quinoa rinsed
- 5 tablespoons lime juice divided
- 2 medium ripe avocados peeled and coarsely chopped
- 2 tablespoons plus 3/4 cup sour cream divided
- 1/4 cup fresh cilantro minced
- 3 plum tomatoes chopped
- 3/4 cup cucumber peeled and seeded, finely chopped
- 3/4 cup zucchini finely chopped
- 1/4 cup red onion finely chopped
- cucumber slices optional, to taste, for serving
Directions
- Add the black beans, the cumin, the paprika, the cayenne, and 1/3 cup of the water to a food processor.
- Pulse the bean mixture together until smooth.
- Season the bean mixture with the salt and the pepper.
- In a small saucepan, cook the quinoa with the remaining water, according to the package directions.
- Fluff the quinoa with a fork.
- Drizzle the quinoa with 2 tablespoons of the lime juice.
- In a separate bowl, mash together the avocados, 2 tablespoons sour cream, the cilantro, and the remaining lime juice.
- In a 2 1/2-quart serving dish, combine the bean mixture, the quinoa, the avocado mixture, the remaining sour cream, the tomatoes, 3/4 cup of the chopped cucumber, the zucchini, and the red onion.
- Serve immediately with the cucumber slices.
