Ingredients

  • 1 (6-ounce) zucchini sliced into rounds
  • 1 (6-ounce) yellow squash sliced into rounds
  • 1/2 yellow bell pepper cut into strips
  • 1/2 red bell pepper cut into strips
  • 1/2 red onion cut into strips
  • 8 ounces white button mushrooms sliced
  • 1 cup cherry tomatoes
  • 1/2 cup olive oil
  • 1/2 cup soy sauce
  • 1/2 cup lemon juice
  • 1 clove garlic crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper plus more, to taste, optional, for garnish
  • parsley leaves optional, to taste, for garnish

Directions

  • In a gallon-sized resealable plastic bag, add the zucchini, the yellow squash, the yellow bell pepper, the red bell pepper, the red onion, the mushrooms, and the cherry tomatoes.
  • Whisk together the olive oil, the soy sauce, the lemon juice, the garlic, the salt, and 1/4 teaspoon of the pepper.
  • Pour the marinade over the vegetables and seal the bag.
  • Refrigerate the vegetable mixture for at least 30 minutes.
  • Transfer the vegetables from the marinade and place them in a large grill basket.
  • Preheat the grill to medium heat.
  • Place the vegetables on the grill and cook until tender, about 15-20 minutes.
