  • 5 pounds red potatoes skin-on, diced
  • 1 stick butter
  • 8 ounces sour cream
  • 1 teaspoon garlic minced
  • 1/4 teaspoon black pepper
  • 1 1/2 teaspoons salt
  • 1/4 cup heavy cream

Directions

  • In a medium Dutch oven, add the potatoes and enough cold water to cover them and bring them to a slow boil over medium-high heat.
  • Reduce the heat to low and boil until the potatoes are tender, about 30 minutes.
  • Drain the potatoes in a colander and return them to the Dutch oven.
