Ingredients

  • 2 sticks unsalted butter room temperature
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs beaten
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1 cup cornflakes
  • 1 cup rolled oats
  • 1 cup semisweet chocolate chips
  • 1/2 cup shredded coconut
  • 1/2 cup dried blueberries
  • 1/2 cup dried cherries
  • 1 cup pecans chopped

Directions

  • Preheat the oven to 350 degrees F.
  • Grease a 9x13-inch baking pan.
  • In a large mixing bowl, add the butter, the granulated sugar, and the brown sugar and using an electric hand mixer on medium speed, beat to combine.
  • Add the eggs and the vanilla to the butter mixture and beat to combine.
  • Add the flour, the baking powder, the baking soda, the cinnamon, and the salt to the butter mixture and stir and mix until just combined into a dough.
  • Add the cornflakes, the oats, the chocolate chips, the coconut, the blueberries, the cherries, and the pecans and fold and stir until just combined.
  • Spread the dough evenly into the prepared baking pan.
  • Bake until the edges are set and the dough is lightly browned on top, about 25 minutes.
  • Allow the bars to cool for 15 minutes.
  • Slice the bars into serving-sized pieces and serve.
