  • 1 (16-ounce) box spaghetti
  • 2 tablespoons vegetable oil
  • 4 (4-ounce) chicken breasts boneless and skinless, cubed

  • 3 cloves garlic minced
  • 2 tablespoons cornstarch
  • 1/3 cup reduced-sodium soy sauce
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha
  • 2 tablespoons rice wine vinegar
  • 1/2 cup roasted peanuts chopped
  • 3 scallions thinly sliced

Directions

  • In a large pot of salted, boiling water, cook the spaghetti to al dente, according to the package directions. Drain the spaghetti.
  • While the spaghetti is cooking, in a large skillet over medium-high heat, add the oil.
  • Evenly season the chicken cubes with the salt and the pepper.
