  • 8 ounces spicy or sweet turkey sausage links casings removed, and meat crumbled
  • 2 scallions sliced
  • 6 large eggs
  • 6 large egg whites
  • 1 3/4 cups 1% milk
  • kosher salt to taste
  • pepper to taste
  • 1 (9-ounce) package frozen chopped spinach thawed and drained of excess liquid
  • 3/4 cup cheddar shredded
  • 1/2 cup parmesan grated
  • 1/2 whole-wheat baguette cut into 3/4-inch cubes

Directions

  • Coat a 3-quart casserole dish with cooking spray.
  • Heat a large, nonstick skillet over medium heat.
  • Add the turkey and the scallions to the skillet and cook, stirring to break up any large chunks, until browned and cooked through, about 10 minutes.
  • Transfer the skillet away from the heat and allow it to cool slightly.
  • In a large bowl, whisk the eggs, the egg whites, the milk, the salt, and the pepper until combined.
