- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 4 teaspoons baking powder
- 1 1/2 teaspoons salt
- 1 teaspoon rubbed sage
- 1 teaspoon dried thyme
- 1 1/2 cups yellow cornmeal
- 1 1/2 cups celery chopped
- 1 cup onion chopped
- 1 (2-ounce) jar chopped pimientos drained
- 3 large eggs room temperature, beaten
- 1 1/2 cups fat free milk
- 1/3 cup vegetable oil
Directions
- Preheat the oven to 400 degrees F.
- Grease a 10-inch oven-safe skillet.
- In a large bowl, add the flour, the sugar, the baking powder, the salt, the sage, and the thyme and stir to combine.
- In another bowl, add the cornmeal, the celery, the onion, and the pimientos and stir to combine.
- Add the celery mixture to the flour mixture and mix well.
- Add the eggs, the milk, and the oil to the batter and stir until it is just moistened.
- Pour the batter into the prepared skillet.
- Bake the bread until a toothpick inserted into the center comes out clean, about 35-45 minutes.
